Bread & Butter Jalapeño Pickles Recipe

I'm in Georgia for the July 4th holidays and my mom and I have been taking advantage of the local produce and doing some pickling. First up, bread and butter pickles -- we went off of a few recipes and here is the recipe we came up with:

Ingredients:
- Approximately 4 pounds of pickling cucumbers, sliced
- 5 small onions, separated into rings and then thinly sliced
- 5 jalapeño peppers, sliced and seeded
- 1/2 cup of canning salt (you can substitute with kosher salt, but canning salt works best)
- 5 cups of sugar
- 2 cups of white vinegar
- 2 cups of apple cider vinegar
- 2 tablespoons of mustard seed
- 2 teaspoons of celery seed
- 1.5 teaspoons of ground turmeric
- 1/2 teaspoon ground cloves
- 1/2 teaspoon red pepper flakes for a bit of spice :)

What To Do:
- The first step is to cut all of your produce. Slice both ends off of your cukes and then slice them into 1/2 inch pieces. We used this handy tool to make them crinkle cut, but a regular ol' knife works just fine. Slice your onions into rings and then thinly slice them into pieces. For your jalapeños seed them and slice them into thin pieces. Make sure you wear gloves for this step to protect your skin!
- Thoroughly mix the cukes, onions, and jalapeños with the canning salt, lay a cheese cloth or tea towel over your mixture, and spread a few cups of crushed ice on top of the cloth. Put your bowl into a fridge for 3 hours.
- After 3 hours of chilling, rinse the produce, drain, and rinse again.
- Next, we'll want to create a brine. Mix together the vinegars, spices, and sugar. Bring the brine to a boil and then add the produce mixture. Bring the mixture to a boil and then remove from the heat.
- After sterilizing your jars, tightly pack each jar and fill with brine (stop 1/2 inch from the rim of the jar).
- Place a sterilized lid on each jar and seal it using a canner. We use a steam canner, which I find MUCH easier to use than a water bath canner.
- Let each jar process for approximately 10 minutes in the canner, then remove carefully and let cool. Each seal should pop down! If they don't for some reason, stick your pickles in the fridge and consume within a few weeks. :)

Spring Wish List

I realize that most of the country is still under snow, but in San Francisco, the weather has been delightful. The last two weekends have been perfect: sunny and 70! The warmer weather makes me excited for my August bachelorette party to the beach and my honeymoon to Hawaii in November. Here are a few of the things on my spring/summer/vacation wish list this year:

-2. Cat eye sunnies to feel glam - Stella McCartney ($225).
-3. Straw fedora to shield my face from the sun - Old Navy ($12).
-4. A DVF iPhone case in a bright pattern - DVF ($40).
-5. Swedish Hasbeens in poppy, because Hasbeens are hands down my favorite summer shoes - ModCloth ($220).
-6. Nail polish in bright, Spring colors - OPI or Essie ($8-15).
-7. A sweet, pastel watch - Kate Spade ($195).
-8. A straw clutch, which will transition well from day to night - Boohoo ($36).

Summer Corn

We try to grill out a lot during the summer months and corn is our go-to side dish. Corn on the Cob is easy and delicious, but lately we've been trying out a few other corn-based side dishes that are a bit more exciting. Below are a few of our recent favorites!

BEACH BEACH BEACH

If you can't tell by this post, I can't stop thinking about the beach. I just can't wait to go. After work, I am heading straight to Barnes & Noble to get those two books and then off to Target to try to find a bathing suit.

World Cup's Stars

I am so excited for the World Cup to start! I spent the summer of 2004 in Germany enjoying all of the World Cup festivities, but no South Africa for me this year. Bummer! I guess I will just have to settle for watching the games on TV and enjoying the bodies of the players in the new Vanity Fair spread, shot by the one and only Annie Leibovitz. GO PORTUGAL! :)

Bye Summer

When I was younger, I hated the time of year when you could feel summer slipping away. But that was a time when summers were filled with family vacations to Florida, lake trips, and daily pool trips. I have to say that I don't really feel like I'll miss summer this year since I spent mine taking two challenging classes, working, and trying my best to avoid the million degree heat and constant Georgia humidity. Sooooo now that school is back anyways, I'm completely ready for cool weather. I'm ready for tights, boots, and layers!
